2004 Txakoli Txomin Etaniz
Basque Region, Spain
Pronounced “CHA-koli,” this unique wine comes from the Basque region of Spain, hence its idiosyncratic spelling. The grape—Hondarribi Zuri—is rare, found only in the seafood-eating region of Geteria and comparable to a racy Sauvignon Blanc. This legendary cult wine is a great pick-me-up, full of grapefruit, lime, spice, minerals and spritz reflecting the soil of the area as well as the robust tastes of the winemakers. Recommended as an accompaniment to appetizers, Txakoli pairs wonderfully with oysters, ahi tuna tartare, Crab Louis, scallops, calamari or prawns.

2003 Roger Champault Sancerre Les Pierris
Sancerre Region, France
A true Sauvignon Blanc from the well known Sancerre appellation in France’s Loire Valley. The sandy limestone soil deposited from oceans of the Jurassic long gone help create dry but lush grass, herb and lime notes. This wine is good with the arugula of the crab cakes, fresh mixed- greens and vinaigrette, oysters, mango salad, prawns and scallops. A wine that can be enjoyed all night.

REDS

2003 Perrin Vacqueryras
Vacqueryras, Côte du Rhône, France
Vacqueryras village has one the highest ratings in the stone-laden soil of the Côte du Rhône region of France. This wine is 75 percent Grenache noir and 25 percent Syrah. Its nose is full of dark fruit and spice followed by smoke, minerals and tar. A capable and layered structure that pairs well with the restaurant's Ravioli Bolognese or any of our red meat dishes—from the Yankee Pot Roast and the Lamb Shank to our choice New York Steak.

2000 Foxen Syrah
Santa Barbara, California
Foxen was made famous by the movie “Sideways” when Miles and Jack visited the winery and stole a taste as the winemaker looked the other way. This Syrah is meaty and will surprise you with its complexity, being a mix of 86 percent Syrah and 14 percent Mourvedre—both Rhône Valley varietals. Because the fruit was picked when very ripe, hints of toast and smoke, even bacon fat and roasted coffee, are supported with a long wash of blackberry tinged with white pepper. An engaging wine that is pairable with dark meats and sauces.
